Why use Tenerum®?

Tenerum® is a soft wheat flour made from 100% Italian wheat. It is perfect for small fancy cakes because a simple process with just a few ingredients provides maximum flavour.

The chef’s advice: place a 2mm thick shortbread biscuit (made with Tenerum®, sugar and butter) on top of your cream puffs to make them swell even more during baking. This will keep the steam in, allowing your cream puffs to rise and puff out.
